The NERD in me loves cake pops!

I thought since Valentine's day is coming up that these could be a nice treat for people to make for their kids. However, I'm not to blame when your child is bouncing off the walls due to a sugar overload. These were kid tested, and approved!

Materials Needed:

  • 1 White Cake Recipe (or 1 box white cake mix)
  • 1 Large box of NERDS
  • 1 Lemon
  • White fondant
  • Candy Melts (Whichever colors you want; I used Orange, Lime Green, Pink & Yellow)
  • White Sixlets
  • Black Cocoa Butter (or Black edible marker)
  • Parchment Paper
  • Lolly Pop Sticks

Directions:

First you will make your cake as directed on box or recipe and add zest of 1 lemon. Line your pan with the parchment paper; that way you can get out every last crumb of cake! Set cake aside to cool. Once cake is cooled you can begin crumbling the cake in a large bowl, mixing in the icing little by little. Add NERDS. I used about a 1/2 cup.

Once mixed the cake should be easy to mold but NOT sticky. You will want to form cake into an egg shape about 1 1/2 inches. Place the egg shaped mini cakes on a lined baking sheet and put in freezer for AT LEAST one hour.

  1. Remove cake from freezer and begin molding the NERDS head. Make a small ball with fondant. Attach the ball to the tip of the egg shaped cake by using melted candy melts.

  2. Next roll out two dime sized flat circles, and two ovals (slightly smaller than the circles). Attach 1 circle to each lower side of the NERDS body. Once the circles are secure to the NERDS body, add one oval just under the circle of each side. This is how it should look:

  3. NERDS need hands right? Make the hands by rolling out two small balls, using scissors or a knife cut a slit in the ball creating the NERDS fingers.

Once your hands are complete secure them towards the top of the NERDS body, one on each side.

  4. Now that the NERD is created its VERY IMPORTANT to put the NERDS back in the freezer for another hour. The reason for this is because the NERD is heavier and when you dip it in the chocolate it cannot support its weight. Remove NERDS from freezer. Poke hole in bottom of NERD with a lolly pop stick that has been dipped into the melted chocolate. Let the chocolate dry before submerging the NERD into the candy melt.

  5. While NERD is still wet add the White Sixlets to the top of the head. Once the chocolate has hardened use the Black Cocoa Butter (or black edible marker) to add the eye balls, and the mouth on the NERD.

I felt the need to make several different NERDS, here's a little photo-shoot I had with the pops! I absolutely LOVED the taste of these bad boys too. Tart and Sweet, this is sure to be a kid-favorite cake pop!
